Pumpkin Pie Waffles

Pumpkin Pie Waffles

In a food processor add

2C oatmeal

1tsp of baking powder

1/2tsp salt

Cinnamon, nutmeg, clove, all spice, ginger, turmeric 

Pulse until combined

2 eggs (flaxseed eggs welcome)

1 banana 

1/2 C pumpkin 

3/4 C kefir (plain) yogurt works too

Pulse 10 times to combine - careful not to over mix

With an ice cream scoop place batter into waffle iron the rest is magic. 

Take the remaining pumpkin (if you used a can) heat it in a pan with a dab of coconut oil, 2Tbsp chia seeds, sprinkle of salt, maple syrup, vanilla & orange oil. Top it with your favorite cream or eat it as is. Add pumpkin seeds.

Like it sweeter? - add more sweetener of your choice. Like it spicier add the same seasonings you added to the waffles. Like it creamier add a dab of coconut cream to the pumpkin. With spices I start small and add more per our taste buds. We are spicy people and I don’t like dishes so I use the same teaspoon to add spices. If the batter looks dry add a bit more kefir or coconut oil. I have even been known to add olive oil if the batter seems dry. Experiment and tell me what you think.
